Three ways with Potatoes

Hassleback Potatoes


Ingredients

1kg Charlotte potatoes, medium-sized

flaky sea salt

50ml of rapeseed oil

grated Parmesan, optional


Method

Preheat the oven to 200°C

Using a sharp knife, cut 3/4 through a potato. It should cut almost all the way through the potato, leaving the bottom intact to hold the slices together. Place the potatoes in a baking tray and drizzle over the oil. Season with salt then put in oven and cook for 45 minutes, until the potatoes are golden brown and the edges are crispy

Smashed potatoes


Ingredients

750g new potatoes

4 tbsp vegetable or rapeseed oil

2 garlic cloves, skins left on, smashed with the side of a knife

4 thyme sprigs (optional)

sea salt flakes


Method

Part boil the potatoes, meanwhile, heat 2 tablespoons of oil in a frying pan. Place the potatoes in the pan and use the tines of a fork to squash each potato until flattened and starting to break up. Throw in the garlic and thyme, drizzle over a further tablespoon of oil and then cook for 5 minutes, repeat until golden and crispy. Sprinkle with salt

Air Fryer Spiral Potatoes 


Ingredients

800g/1lb 12oz large Charlotte potatoes 2 tbsp olive oil

1½ tsp paprika

¼ tsp cayenne pepper

salt and freshly ground black pepper


Method

Preheat the air fryer to 180C. Insert a skewer through the centre length of each potato (metal skewers are best as you’ll need to press the knife against it while cutting). Using a small, sharp paring knife, make an incision into a potato at one end at a 45 degree angle to the skewer (see recipe tips for more detail). Use your knife to follow this diagonal line around the circumference of the potato in a spiral, allowing the knife to cut right through to the skewer in the centre. Stop cutting when you get to the other end of the potato. Repeat with the remaining potatoes.

Carefully toss the potatoes with the oil and spices in a bowl and season well with salt and pepper. Cook for 30 minutes, turning halfway, until crisp on the outside and tender on the inside – you may need to do this in batches depending on the size of your air fryer. Serve immediately.
