Spinach pesto

With the winter weather limiting our variety of produce, sometimes you need to switch things up a bit! Try making this home made pesto and add it to your pasta, chicken or roast potatoes. My favourite all time use of pesto was on a cut open baked potato with mozzarella melted on top. yum. 

Combine in a blender: 

  • A bunch of spinach (washed) 
  • a handful of pistachios
  • half an avocado
  • A squeeze of lemon
  • 2 tsp of plain yoghurt
  • Seasoning

Blend until it is a smooth green consistency, this can take a while but just keep pushing the mixture together to help the blender do its work. 

Serve in your preferred dish.
